Sushi Wadatsumi specializes in authentic Edo-style sushi. Historically, Edo-style sushi involved pressing fresh ingredients with vinegared rice, as refrigeration was unavailable. Ingredients were often preserved using vinegar or salt - a method which has become a traditional sushi technique Edo style sushi making. At Sushi Wadatsumi, we present the freshest and most delicate dishes with authentic craftsmanship, ensuring our guests enjoy high-quality cuisine.

The Origin of Our Name

The name Wadatsumi means "The God of Sea," symbolizing the restaurant's dedication to using the best ingredients from the ocean. By invoking the skills of the deity who rules the sea, we strive to prepare a variety of exquisite Japanese seafood cuisines.

From ingredients to cooking methods, Sushi Wadatsumi is committed to excellence, offering delightful surprises in every bite. To guarantee the quality and taste, we use the finest, freshest ingredients, selecting the best imported seasonal fish fresh from Japan daily. All the sushi rice at Wadatsumi is blended by Chef Kin using different varieties of aged rice. Chef Kin believes that the flavor of vinegared rice can express his sushi-making philosophy and reflect mainstream preferences. He stays true to tradition while making appropriate adjustments for Hong Kong diners. For instance, he notes, "Japanese people generally prefer ginger that is more acidic, while Hong Kong people tend to like it sweeter, so I make adjustments." Additionally, Sushi Wadatsumi's vinegared rice is refreshing, with a balanced sweet and sour taste, leaving a lasting impression.

Restaurant Style

At Sushi Wadatsumi, we embrace natural architectural materials, primarily wood and stone, to create a dining space that exudes comfort and tranquility. The height of our tables and chairs is meticulously designed to ensure maximum comfort for our guests. We use standard-height dining chairs paired with elevated platforms, allowing guests to communicate effortlessly with the chef without having to lift their heads.
