Wadatsumi, while located in Hong Kong, proudly serves the finest quality seafood, air-shipped daily from Toyosu Market and offered at its peak freshness on the same day.
The carefully selected seafood is transported to the airport by 6 a.m.,
undertakes a journey of approximately five hours by air,
and arrives in Hong Kong by the afternoon.
Upon arrival, it is promptly prepared with the traditional techniques of Edomae sushi,
ensuring it is served in the finest condition to our evening guests.
The system allowing us to serve seafood purchased that very morning from across Japan at Toyosu Market
is equivalent in quality to that of the finest sushi establishments in Tokyo.
Our procurement operations are supported by over a decade of trust and collaboration
with our Japanese sourcing partners.
By sharing Wadatsumi’s philosophy and detailed requirements daily,
we have built a procurement network that delivers the same quality ingredients to Hong Kong
as one would expect in Japan.

Edomae sushi is not merely the act of slicing and placing fish atop rice.
It is the culmination of careful preparation and technique,
drawing out the maximum flavor of each ingredient with skill and dedication.
This craftsmanship has been refined and handed down over centuries by master artisans.
We are equally uncompromising with our rice.
Only the finest selections, such as premium Koshihikari rice, are used.
By carefully choosing the best varieties and regions according to the season and conditions,
and by maturing the rice appropriately after harvest,
we ensure the ideal texture and flavor for our sushi.
Rather than using freshly harvested rice,
we use perfectly matured rice to control the moisture content,
creating a sushi rice that gently falls apart and offers the finest mouthfeel.
Currently, we use pesticide-free rice,
and we are considering introducing "completely natural rice" cultivated through ancient agricultural methods.
